Codfish Cakes Stuffed with Serra Cheese

Ingredients

300 g soaked and shredded codfish
500 g boiled potatoes
1 egg
1 tablespoon chopped parsley
100 g of Serra cheese (or similar buttery cheese), cut into cubes
Salt and pepper to taste
Oil for frying

Preparation

Prepare the dough:

01. Crush the boiled potatoes and mix with the shredded cod, egg, parsley, salt and pepper.

02. Knead well until a homogeneous mixture forms.

Shape the pastries:

03. Shape small portions of dough, placing a cube of cheese in the center. Close tightly to form croquettes.

Fry:

04. Heat the oil in the World's Best Frying Pan and fry the pasties until golden brown.

05. Drain on absorbent paper.

Serve:

06. Serve hot, with the cheese melted inside.
